Ingredients
2 lbs chicken breast, pounded to 1/2” thick
1 loaf hearty bread like sourdough. I make my own…you can use what you like
2 tsp salt
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp black pepper
1 - 2 tbsp olive oil
3 tbsp butter
6 slices Gouda cheese—more if you want 2 slices per sandwich
Sri Racha to taste (1 2 tbsp)
½ cup Mayo (@chosenfoods avocado oil Mayo)
Directions
Step 1
Pound chicken to 1/2” thick. Lay flat on a large baking sheet & sprinkle with all seasonings on both sides. Rub in thoroughly.
Step 2
Heat a pan with 1 tbsp olive oil to medium high heat & cook on each side for about 5 minutes. Repeat until all chicken is cooked.
Step 3
Slice & butter one side of your bread. Lay buttered side down. Place chicken & cheese on top. Lay another slice of buttered bread on top, buttered side up, and place into pan, cooking for 4 minutes over medium heat. Flip and cook the other side for another 4 minutes.
Step 4
Transfer to a cutting board to cool. Slice & serve with Sri Racha Mayo—simply mix Mayo & Sri Racha together.
