Ingredients
2 - 12 inch French loaves
2 ½ lbs chicken breast/thighs
1 tbsp olive oil
2 tsp oregano
1 tbsp Italian seasoning
1 tsp garlic powder
1 tsp coriander
1 tsp salt
½ tsp black pepper
1 head of lettuce
½ red onion
1 cup pickles
1 cup tomatoes
½ cup pepperoncini
½ cup mayo, adjust to taste
2 tbsp red wine vinegar
2 tsp Italian seasoning
4 slices provolone cheese
Directions
Step 1
Drizzle chicken with olive oil. Season with spices and herbs.
Step 2
Heat pan to medium high heat. Cook chicken until done…6-7 minutes each side.
Step 3
Add chicken and all remaining ingredients to a large dish or a large cutting board. Chop with a knife…I used a bench scraper.
Step 4
Slice your loaves from front to back. Once chopped to a desired consistency, begin filling your loaf with Italian mixture.
Step 5
Cut into serving portions. Serve and enjoy!
