Pulled Chicken Sloppy Joes

I absolutely love chicken, but at times I get tired of eating it in pasta and other dishes. I thought about making some type of sloppy Joe with it, and despite the fact that many people will tell me 'these aren’t sloppy joes,' I couldn’t help but whip them up with some awesome southern style mustard BBQ sauce. The mustard sauce alone is worth SAVING and SHARING this recipe…seriously.

Ingredients

Chicken

2 ½ pounds chicken breast

2 tbsp olive oil

2 tsp paprika

2 tsp garlic powder

1 tsp onion powder

1 tsp salt

Buns or rolls of choice

Mustard BBQ

1 cup Dijon mustard

2 tbsp honey

2 tbsp brown sugar

⅓ cup apple cider vinegar

1 tbsp horseradish (optional)

2 tsp Worcestershire sauce

1 tbsp garlic powder

½ tsp black pepper

Directions

Step 1

Combine all your mustard ingredients into a jar. Shake and place into fridge.

Step 2

Pound your chicken breasts to a uniform thickness. Drizzle with 1 tbsp olive oil. Cover with seasonings and massage into chicken.

Step 3

Heat a large pan over medium high heat with the remaining tbsp of oil and then place chicken breasts into pan cooking on both sides for about 6-7 minutes.

Step 4

Chop chicken breasts in the pan or remove and dice. Mix with bbq sauce until it reaches your desired consistency and taste.

Step 5

Top your buns with slices of cheese (I went with provolone), then top with generous scoops of chicken. Place the top on. Spread with butter. Place into the oven at 350° for 5-10 minutes until the cheese melts.

Step 6

Remove, slice, serve, and enjoy!

Step 1

Combine all ingredients until well combined.
