Parmesan Garlic Smashed Baby Potatoes

An awesome side dish your whole family will love, especially the kids! Total time of preparing is less than 10 minutes. Throw them in the oven for another 20 and you have yourself and epic side for dinner!

Ingredients

1 package baby potatoes (about 25)

3 tbsp butter

4 cloves garlic, grated

1 cup Parmesan cheese, finely grated

Salt and pepper

Ranch dressing (I make mine from scratch)

Hot sauce (I used @melindasfoods)

Directions

Step 1

Bring a small sauce pot of salted water to a boil. Add baby potatoes and cook until fork tender. Remove and set aside once done.

Step 2

In the same pot melt your butter and then add in your garlic, salt, and pepper. Let cook over low heat until fragrant, 2-3 minutes.

Step 3

Smash your baby potatoes and lay flat in a 9x13 baking dish. Drizzle with garlic butter and spread over potatoes. Cover with Parmesan cheese and bake in oven at 400° until golden brown (about 20 minutes).

Step 4

Serve with spicy ranch, ketchup, or condiment of choice.
