Ingredients

2 –3 pounds salmon fillets

1 large onion, diced

6 garlic cloves, minced

1 cup cherry or roma tomatoes, diced

1 cup vegetable broth

1 cup heavy cream

1 tbsp flour

1 container (8 oz) fresh spinach, chopped

1 tbsp Italian seasoning

1 tbsp salt (to your taste)

1 tsp pepper

Olive oil for cooking

Directions

Step 1

Lay salmon fillets skin side down. Sprinkle with Italian seasoning, salt and pepper, gently rub in. Cut salmon fillets into 3-4 inch-wide pieces.

Step 2

Add some olive oil to a pan over medium heat. Add salmon pieces skin side up into hot oil and cook on each side for 3-4 minutes. Remove from pan and set aside.

Step 3

Drizzle more olive oil into the pan over medium heat. Add in onions, cook until softened. Add in tomatoes, cooking for another minute. Add your garlic. Cook until fragrant. Add in your broth and cream. Stir to combine.

Step 4

Once combined and heated through add in your flour. Whisk constantly for a few minutes until fully combined. Bring to a simmer to allow it to thicken.

Step 5

After it has thickened, add in your spinach. Stir to combine until it wilts down. Add your salmon back in. Spoon some sauce over the filets.

Step 6

Serve with some sauce over top of the salmon and alongside some freshly steamed vegetables!
