Ingredients
Chicken Pasta
2 lbs chicken breasts
1 box pasta of choice (we love penne)
1 large onion
4 cloves garlic, minced
1 cup (8 oz) Parmesan cheese, grated
1 cup heavy cream
1 ½ cups chicken broth
1 tsp Italian seasoning
1 - 2 tbsp fresh basil
1 tsp salt
½ tsp red pepper flakes
1 jar sun dried tomatoes, drained & chopped
1 tbsp olive oil
Chicken Seasonings
1 tsp Italian seasoning
1 tsp thyme
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
Directions
Chicken Pasta
Step 1
Pound chicken breasts to a uniform thickness, about 1/2 inch thick. Combine chicken seasonings and then rub into chicken breasts.
Step 2
Heat a large pan over medium high heat. Add olive oil. Once heated, add in chicken breasts. Cook for about 6 minutes on each side, until golden brown. When done remove from pan and set aside.
Step 3
Cook your noodles at any time.
Step 4
Using the same pan, and without cleaning it, add a little olive oil and then sauté your onions. Once softened, add your garlic and cook for one minute. Add heavy cream and chicken broth red pepper flakes, Italian seasoning, fresh basil, and salt. Bring to a simmer and allow to thicken.
Step 5
Once thickened, add in your sun dried tomatoes and Parmesan cheese. Stir until combined, reduce heat to low.
Step 6
Slice your chicken breasts into strips and then add back into your sauce. Add noodles in as well. Stir until combined. Heat through and serve. Enjoy!
