Marry Me Chicken Grilled Cheese

You’ve probably seen it a variety of ways by now…with pasta, with steak, but I’m guessing you haven’t seen it as a grilled cheese sandwich with my delicious homemade tomato bisque! Wait no longer, and make this ASAP…it’s that good!

Ingredients

Sandwich

2 lbs chicken breasts

1 tbsp olive oil

1 tsp salt

2 tbsp butter

4 garlic cloves

1 cup chicken stock

1 cup heavy cream

1 tsp oregano

2 tsp italian seasoning

1 jar sun dried tomatoes, chopped

½ cup grated parmesan

10 slices provolone cheese

Bread of choice

Chicken Seasoning

2 tsp salt

1 tbsp oregano

1 tbsp Italian seasoning

2 tsp garlic powder

2 tsp onion powder

Tomato Bisque

6 peeled Roma tomatoes OR 1 large can whole peeled tomatoes

2 tbsp olive oil

6 cloves garlic, minced

1 tbsp fresh basil

½ tsp salt

½ tsp black pepper

½ cup heavy cream

Directions

Sandwich

Step 1

Heat 1 tbsp olive oil in a large pan over medium high heat. Drizzle your chicken with olive oil then coat with seasonings above. Place chicken into pan, cooking fully, then set aside, and slice once cooled.

Step 2

Melt butter in the same pan, then add your garlic. Cook until fragrant. Add your chicken stock and bring to a simmer, then add in oregano, italian seasoning, sun-dried tomatoes, and heavy cream. Cook until it begins to thicken. Salt if necessary.

Step 3

Once sauce has thickened, add in your parmesan cheese and chicken. Cook, stirring until fully combined, then remove from heat.

Step 4

Slice your bread and butter one side. Heat a nonstick pan to medium heat, Bread, buttered side down, cheese, chicken mixture, cheese, bread, buttered side up. Press together. Let cook until golden brown, then flip and cook until golden brown. Repeat until all sandwiches are done.

Step 5

For the Bisque, Add ingredients together in a sauce pan and cook until tomatoes have softened. Add to a blender, along with the heavy cream and blend until combined. Dip & Enjoy!
