Ingredients
2 lb chicken breasts
2 cups cooked rice
1 cup freshly grated Parmesan cheese
2 whole lemons
1 cup heavy cream or milk
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
Directions
Step 1
Combine juice from one whole lemon, olive oil, salt, pepper, and garlic powder in a bowl. Stir to combine.
Step 2
Add chicken to bowl, mix until fully coated. Cover and place in fridge to marinate for at least 30 minutes.
Step 3
Heat pan to medium-high heat. Add chicken breasts and cook until golden brown on both sides—6-7 minutes each side. Remove from pan and set aside.
Step 4
Deglaze pan with juice from remaining lemon. Pour in heavy cream, stirring constantly until heated through. Add in Parmesan cheese and a pinch or two of pepper. Stir until cheese is melted and combined with cream.
Step 5
Slide chicken, lay atop a bed of rice, pour lemon pepper sauce on top.
