Ingredients

1 pound ground beef

4 garlic cloves minced

1 tablespoon olive oil

1 red bell pepper diced

1 zucchini sliced

1 cup shredded carrots

8 ounce mushrooms sliced

⅓ cup packed brown sugar

½ cup reduced sodium soy sauce

1 tablespoon sesame oil

½ teaspoon ground ginger

¼ teaspoon crushed red pepper flakes

½ teaspoon pepper

Directions

Step 1

Prepare rice according to package.

Step 2

Begin by browning the ground beef in a pan. Add in minced garlic and cook for a minute. Remove from the pan and set aside.

Step 3

In the same pan, add olive oil, red bell pepper, zucchini, carrots, and mushrooms. Cook for a few minutes until they release their liquid.

Step 4

While the veggies cook down, prepare the stir fry sauce by combining the remaining ingredients in a bowl and stirring together.

Step 5

Add the cooked ground beef back to the pan with the veggies. Pour in the stir fry sauce. Stir and let cook together for another couple of minutes.

Step 6

Serve over rice and pour a little extra sauce on top. Enjoy!
