Ingredients

2 lbs chicken breasts
4 slices provolone cheese
salt and pepper
Italian seasoning blend from @gryffonridgespicemerchants
1 tbsp Italian seasoning
Tomato Topping
2 cups tomatoes
⅓ cup chopped fresh basil
¼ cup Parmesan cheese
2 cloves garlic, minced
1 tablespoon balsamic vinegar, more if desired
2 teaspoons extra virgin olive oil
¼ teaspoon sea salt
¼ teaspoon black pepper

Step 1
Prepare all your bruschetta ingredients and mix together.
Step 2
Pound your chicken breasts to about a 1/2 inch thick and season with salt, pepper, and Italian seasoning.
Step 3
Heat olive oil over medium heat and cook chicken breasts fully.
Step 4
When done, top with bruschetta, provolone cheese, and broil in the oven for about 5 minutes until the cheese is melty and begins to brown.
Step 5
Allow to cool for a few minutes. Serve and enjoy!
