Ingredients
3 - 4 large zucchini
1 cup cocoa powder
1 tbsp vanilla
1 tsp salt
⅓ cup sweetener of choice
1 cup heavy cream
2 bananas or 2 avocados (optional)
Directions
Step 1
In a pan over medium heat, add sliced zucchini and 1/2 cup of water. Cover and cook until softened. Once fork-tender, transfer to a blender.
Step 2
Add the rest of the ingredients to the blender and blend until smooth and creamy, for about a minute or two. Adjust sweetener as needed.
Step 3
Pour the mixture into a container and place it in the freezer for 2-3 hours or until fully hardened.
Step 4
Remove from the freezer ten minutes before serving. The ice cream will have a perfect creamy consistency. Enjoy!
