Ingredients
6 ounces cream cheese, softened
½ cup salsa
2 tbsp fresh lime juice
1 tsp cumin
2 tsp chili powder
1 ½ tsp onion powder
6 cloves garlic, minced
4 tbsp chopped cilantro
4 cups shredded (or diced) cooked chicken
1 ½ cups shredded cheddar cheese
small or medium flour tortillas
kosher salt
cooking spray
Directions
Step 1
Add 1 tbsp olive oil to a pan and heat to medium high heat. Add chicken, salt generously, and cook on both sides until fully cooked.
Step 2
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
Step 3
In a large bowl, mix the cream cheese, salsa, lime juice, ground cumin, chili powder, onion powder and garlic. Once combined, stir in the cilantro and green onions. Add the chicken and cheese; mix thoroughly.
Step 4
Spoon about 1/3 cup of the chicken mixture onto the lower third of a tortilla. Roll the tortilla as tightly as you can.
Step 5
Place the rolled tortilla seam side down on the baking sheet. Repeat with remaining tortillas until the mixture is gone. Spray the tops lightly with cooking spray and sprinkle with salt.
Step 6
Bake for 15 minutes or until crisp and golden.
Step 7
Serve with salsa, sour cream or guacamole.
