Ingredients
2 lbs steak, I used NY Strip
2 - 3 tbsp steak seasoning
12 dinner rolls
3 yellow onions
8 oz mushrooms
1 tbsp balsamic vinegar
6 - 8 slices provolone cheese
For the Cowboy Butter
1 cup butter
ΒΌ cup parsley
1 tbsp chives
1 tbsp thyme
2 tbsp Dijon mustard
6 cloves garlic, minced
Β½ lemon, juiced
1 tsp paprika
1 tsp chili powder
4 oz cream cheese
Directions
Step 1
Drizzle your steaks with a little olive oil. Coat generously with your steak seasoning. Let rest for at least 10-20 minutes, or cover and place in fridge for up to 24 hours.
Step 2
Cook your steaks over medium high heat.
Step 3
While steaks are cooking make your cowboy butter. Melt butter over low heat, then add in remaining ingredients. Let cook together until incredibly aromatic, then remove from heat and set aside.
Step 4
When steaks are close to being done baste in the pan with a few tablespoons of the cowboy butter. Cook to desired doneness, remove and let rest.
Step 5
In same pan, add a tbsp of olive oil, then add in your onions. Cook until softened then add in your mushrooms. Cook until mushrooms release their liquid then add in balsamic vinegar, and salt to taste. Cook until browned and caramelized. Remove from heat once done.
Step 6
Cut buns in half. Spread cowboy butter, then cheese on both halves. Lay down the caramelized onions and mushrooms on the bottom half, then top that with your steak.
Step 7
Place under the broiler for a few minutes. Serve & enjoy!
