Ingredients
2 pounds chicken breast
1 large zucchini (1 1.5 cups), diced
1 large sweet onion, diced
2 potatoes (1.5 cups), mashed
1 cup cheddar cheese
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp paprika
1 tbsp salt
2 tsp pepper
2 tbsp olive oil
3 whole eggs, whisked
2 cups bread crumbs
2 cups olive or avocado oil for frying
Directions
Step 1
Add chicken breasts to a large bowl. Add spices and olive oil...mix to coat chicken.
Step 2
Add chicken to pan over medium heat & let cook for 7 minutes on each side. Remove from pan & place into blender. Pulse blender until chicken is finely shredded.
Step 3
Add 1 tbsp olive oil to a pan & add in the zucchini & onions. Cook until softened.
Step 4
Cook your potatoes at any time. Mash after draining.
Step 5
Combine chicken, vegetables, potatoes & cheese into a large bowl & mix to combine.
Step 6
Scoop 1/3 cup chicken mixture & hand form into cylinders. Set aside until done.
Step 7
Heat 2 cups oil in a small frying pan.
Step 8
Place croquettes into egg wash, then into the bread crumbs. Do this 4-5 times until you have enough to begin frying. Fry 3-5 minutes until bottom side is golden brown. Turn over and do the same. Remove and place onto cookie sheet covered in paper towel.
