Ingredients
2 lbs chicken breast or thighs
1 box (16 oz.) penne
1 large head of broccoli, chopped
2 tbsp butter or olive oil
1 yellow onion, diced
8 oz baby bella mushrooms, chopped
6 cloves garlic, minced
3 tbsp flour
1 cup chicken or veg. stock
1 ½ cups milk
2 tsp sea salt
1 tsp black pepper
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
Directions
Step 1
Prepare all your veggies and other ingredients.
Step 2
Add olive oil to a pan over medium heat. Add in chicken (sprinkle with salt) and cook 5-7 minutes each side.
Step 3
Begin cooking your noodles. Once noodles are almost done add in your broccoli and cook for an additional 4-5 minutes. Just enough to soften broccoli. Strain and set aside.
Step 4
When chicken is fully cooked, remove from pan and allow to cool. Dice and set aside.
Step 5
Without straining the chicken fat or extra olive oil, add your onions to the pan, allowing them to soften. Once softened, add in your garlic and mushrooms. Cool until the mushrooms release their liquid.
Step 6
Add in flour—stir. Add in broth—stir. Add in milk—stir. Add in salt, pepper, and 1 cup of the cheddar cheese—stir.
Step 7
In a deep 9x13 dish add your chicken, noodles and broccoli, and sauce. Gently mix until combined. Top with remaining cheddar cheese and mozzarella.
Step 8
Bake in oven at 400° for 20 minutes. Turn in broil for last few minutes to melt cheese perfectly!
