Ingredients
2 lbs chicken breasts, cubed
1 (1 lb) box noodles
1 medium butternut squash
1 large onion
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
1 cup chicken broth
Olive oil for cooking
4 tbsp butter
4 oz cream cheese
1 cup heavy cream
1 cup (or so) of cheddar cheese
8 oz fresh mozzarella (1 cup)
2 tsp Dijon mustard
Directions
Step 1
Peel, slide, cube your butternut squash. Roughly dice your onion. Cube your chicken breast.
Step 2
Heat olive oil in a pan. Season your chicken breast with Italian seasoning, garlic powder, salt and pepper. Add to pan and cook until done. Set aside.
Step 3
Sauté your onions until softened. Remove and pour into a blender.
Step 4
Sauté your butternut squash, then add chicken broth, cover with lid, and cook until fork tender. Remove and pour into blender.
Step 5
Melt together butter, cream cheese, and heavy cream. Once combined, add in cheeses and mustard. Stir until combined. Pour into blender.
Step 6
Blend until cheese mixture is evenly blended.
Step 7
Add noodles, chicken and as much cheese mixture back to pan as you desire. Stir to combine and serve immediately.
