Ingredients
6 cups broccoli, chopped
4 - 6 cups cabbage, chopped
2 cups carrots, grated
1 large yellow onion, diced
6 cloves garlic, minced
3 tbsp butter
1 tbsp chicken bouillon
¼ cup flour
4 cups broth, chicken or vegetable
1 tbsp all purpose seasoning
1 cup heavy cream
2 cups cheddar cheese
Salt, to taste
Directions
Step 1
Prepare all your veggies beforehand.
Step 2
Melt butter in a large stock pot. Add your onions and cook until softened. Add in garlic and chicken bouillon and cook until fragrant.
Step 3
Add in your flour and mix together until to a paste forms.
Step 4
Pour in your broth, mix until well combined. Add in your veggies and mix together. Bring to a simmer and cover with a lid…cooking until softened.
Step 5
Season with all purpose seasoning and stir. If desired, blend about half of your soup in a blender or with a stick/emulsion blender.
Step 6
Add in your cheese and season with additional salt to your liking. Serve and enjoy!
