Ingredients

2 ½ lbs chicken thighs
½ cup plain yoghurt
5 garlic cloves, minced
1 tbsp coriander powder
1 tbsp cumin powder
2 tsp cardamom powder
1 tbsp white vinegar
1 tbsp chili powder
1 tbsp onion powder
1 tbsp smoked paprika
1 Juice of lemon
¼ cup olive oil
2 tsp salt
2 tsp black pepper
Tomatoes, diced
Red onion, sliced
Lettuce, chopped
Fries
2 lbs potatoes
2 tsp salt
½ tsp black pepper
1 tsp garlic powder
Tzatziki
1 cup plain yoghurt
¾ cup grated & salted cucumber
2 medium garlic clove, pureed
½ cup cilantro, chopped fine
½ tsp coriander
½ tsp cumin

Step 1
Make the marinade as early as possible. Mix chicken thighs into the marinade, cover, and place in the fridge for at least 1 hour.
Step 2
Grate your cucumbers for the sauce. Place them into paper towel and squeeze out the water. Mix all ingredients together and place into the fridge until assembly.
Step 3
Run your potatoes through a mandolin for a shoestring size or use a knife to cut them into 1/4 inch by 1/4 inch sticks. Place them into ice cold water and let them soak for 30 mins. Strain and rinse. Place a few sheets of paper towel on the bottom of the bowl and put fries back in bowl to dry.
Step 4
In a large pan, begin frying your chicken for 6-7 minutes on each side over medium heat. Remove when fully cooked (165°).
Step 5
Heat oil in a sauce pan to medium heat. I use olive oil. Yes…you absolutely can fry in olive oil! Fry potatoes in batches and remove to paper towel when golden brown.
Step 6
Begin assembly—flatbread, sauce, fries, lettuce, tomatoes, onions, chicken, more sauce. Fold over itself, wrap with foil, serve and enjoy!
