Ingredients

3 sticks butter, softened at room temperature

3 ½ cups white sugar

5 large eggs, at room temperature

3 ¼ cups all purpose flour

2 tbsp lemon juice

¾ cup 7UP soda

1 cup powdered sugar

3 - 4 tbsp lemon juice

Directions
Step 1
1. Preheat oven to 325F.
Step 2
2. Place your softened butter into your bowl or stand mixer bowl.
Step 3
3. Add your white sugar.
Step 4
4. Cream sugar and butter together for 3-5 minutes until smooth.
Step 5
5. While mixing, add your eggs one by one.
Step 6
6. Now add your lemon juice and 7UP soda. Mix until combined with batter.

7. Take your flour and sift into batter. You can skip this step but I highly recommend sifting for a smooth batter.

8. Mix your dry ingredient with your wet ingredients until fully incorporated.

9. Take your bundt pan and spray violently with a generous amount baking spray + add flour to ensure it does not stick.

10. I recommend using a scoop to portion out the cake batter to make sure its evenly spread throughout the pan.

11. Bang the pan on the counter once all the batter in it .. this will release any air bubbles hiding in batter.

12. Place in oven on 325F for 1 hour and 10-15 minutes.

13. After 1 hour and 10 minutes, take a knife or toothpick and stick inside. If it comes out clean then take out and let cool completely for 2 hours. If it does not come out clean then bake for 2-5 minutes.

14. Once cake is cooled, lets start making the lemon drizzle.

15. In a bowl, add powdered sugar and lemon juice. Mix. If you want the drizzle to be thinner.. add more lemon juice.

16. Place cake on a cake dish and drizzle it all on the cake.
