Ingredients
10 Chiles de Arbol
10 Chile Puya
10 Chile Guajillo
1 tbsp Oil
10 Tomatillos
6 cloves Garlic Cloves
½ Onion
2 tbsp Salt
Directions
Step 1
Heat a large skillet on medium heat. Remove the stems from the dried Chiles and add to the skillet. Toast for 4-6 minutes or until they’ve darkened in color. Making sure to mix constantly so they won’t burn.

Step 2
Once Chiles are fully toasted add in 2 cups of water, let come to a boil, once boiling turn off the heat and let the Chiles soak in the water for at least 10 minutes.
Step 3
To another skillet on medium heat, add the oil, once hot, add the tomatillos and cook for 8-10 minutes, mixing every couple of minutes.

Once the tomatillos are charred in places, add the garlic & onion, cook for another 4-5 minutes.

½ Onion
Step 5
Add the cooked tomatillos/onion/garlic to a blender along with the rehydrated Chiles and 1 cup of the Chile water. Add salt and blend until combined.

Pour into a bowl & serve with your favorite foods.
