Ingredients

4 tbsp butter

3 cloves garlic

½ chopped onion

2 chiles poblanos, roasted and chopped

5 corn

1 block cream cheese

½ cup sour cream

3 tbsp hot sauce

Salt & Pepper to taste

Cilantro for garnish

Directions
Step 1
In a large skillet, melt the butter, add the garlic & onion, cook for 4-5 minutes.

For the poblano chiles, roast/charr them on your stove over a gas flame, grill, air fryer, broiler setting on oven. Once charred, let them steam in a plastic bag or covered in a bowl for about 10 minutes. Then remove the stems, seeds & chop them up & add to the skillet.

Drain 5 cans of corn, add them to the skillet & mix to combine.

Add in one block of cream cheese & mix around until fully melted & combined.

Next mix in 1/2 cup sour cream until combined.

Add in a couple tbsp of your favorite hot sauce, im obsessed with the @frescosauce Citrus Fresno Hot Sauce. Full mix it in.

Taste the corn & season with salt & pepper to taste.

Pour into serving dish and top with crumbled Queso cotija & cilantro.
