Ingredients
2 cup pepperoni, half in slices, half chopped
3 tbsp olive oil
5 cloves garlic
1 shallot
2 bell peppers
1 tbsp Italian seasoning
1 tsp crushed red pepper
4 cup marinara
1 lb pasta
½ cup Parmesan + more for topping
3 cup Shredded mozzarella
Fresh basil for topping
Directions
Step 1
Bring a pot of water to a boil, salt it like the ocean. Cook past for 6-8 minutes. It wont be fully cooked but will finish cooking in the oven.

Preheat oven to 350 degrees.
Step 3
To a large skillet, add olive oil set to medium heat, once hot, add the sliced pepperoni and cook until crispy, about 5-7 minutes.

Add the garlic(thinly sliced or minced) & shallots(minced). Cook for 2-3 minutes.

Add in the diced peppers, the spices & cook for 3-4 minutes.

Add the marinara and 1 cup of the pasta cooking water, mix to combine.

Stir in the pasta, Parmesan cheese & 1 cup of the mozzarella.

Add the pasta into a baking dish, top with the remaining mozzarella cheese & the pepperoni, the more pepperoni the better.

Bake for 20-25 minutes. Let rest for 5-10 minutes before serving.

Serve with more Parmesan, crushed red pepper & fresh basil.
