Step 1
To the russet potatoes, stab them with a fork to help them cook faster, coat in oil, then wrap in aluminum paper. Add them to the air fryer and cook for about 1 hour at 400 degrees. If using smaller potatoes, they will cook faster.

Step 2
While the potatoes cook, add the diced beef cubes to a large skillet with 1-2 tbsp oil on a medium high heat. Season with the hardcore carnivore seasoning and seasoned salt. Mix to combine. You can use your favorite seasonings.

Step 3
The beef cubes will take anywhere from 10-14 minutes to cook. First they will release all their juices before evaporating to fully cook. Make sure you're stirring every couple of minutes.
Step 4
Once the potatoes are cooked, cut a slit down the top of the potato, push it in from both ends into the middle to open up the potato.
Step 5
To mash up the potato inside, add a couple tablespoons of butter, salt and pepper to taste, mix until fully combined.

Stir in a couple tablespoons of shredded cheese, I used queso chihuahua, but any good melting cheese will work.

1 cup shredded cheese
Step 7
To assemble, top with nacho cheese sauce, more shredded cheese, some of the cooked steak then more shredded cheese. Place back in the air fryer to melt the top of the cheese.

To finish assembling, top with more nacho cheese sauce, mexican crema and pico de gallo.
