Ingredients
1 lb baby red potatoes
¼ cup olive oil
2 lemons
1 tsp garlic powder
salt & pepper to taste
cilantro for garnish
Directions
Step 1
Bring a pot of water to a boil. Once boiling, add 2-3 tbsp salt.
Step 2
Slice the baby red potatoes in half, if they’re tiny, leave them as is.

Add the potatoes to the boiling water and cook until fork tender, about 7-10 minutes.
Step 4
Once tender, drain the potatoes, add them to a large bowl & mix with the olive oil, salt, pepper, garlic powder and the juice of one lemon.

Add the potatoes to baking sheet and spread them out, having them be cut side down on the baking sheet will get you extra crispy potatoes.
Step 6
Bake the potatoes for 30-45 minutes, depending on how crispy you want them. Give them a shake about 20 minutes into baking.
Step 7
Once crispy, plate them up and garnish with lemon zest, lemon juice & either chopped cilantro or parsley.
