Ingredients

4 lb ground pork

3 tbsp kosher salt

2 tbsp black pepper

½ cup guajillo Chile powder

½ cup paprika

2 tbsp ancho Chile powder

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp mexican oregano

1 tsp cumin

¼ tsp ground cloves

¼ tsp ground bay leaves

1 cup white vinegar

Directions

Step 1

Add the ground pork, all the spices and the vinegar to a large bowl. Mix by hand until fully combined.

1 cup white vinegar

Step 2

Let the mixed pork marinate in the fridge for 12-24 hours before using.

Step 3

If not using all immediately, divide the chorizo into zip lock baggies and freeze. The chorizo will keep frozen for a 6 months or longer.
