Ingredients
Greek Chicken

2 lbs boneless skinless chicken thighs

½ cup greek yogurt

2 cloves garlic

1 lemon, zest and juice

1 tbsp onion salt

1 tsp oregano

1 tsp crushed red pepper

2 tsp salt

2 tsp black pepper

¼ cup olive oil + more for cooking the chicken
Pita Sandwiches

4 - 6 pita

1 red onion

1 English cucumber

1 cup cherry tomatoes

1 tbsp garlic powder

1 tsp oregano

2 tsp salt

2 tsp black pepper

¼ cup lemon juice

2 tbsp olive oil

½ cup parsley, chopped

1 cup feta, crumbled

Directions
Greek Chicken
Step 1
Add the chicken thighs along with all ingredients to a large bowl. Mix to combine.

Marinate for at least 30 minutes, but the longer the better, I marinated it for 6 hours.
Step 3
In a large skillet on medium high heat add olive oil, once hot, cook the chicken thighs.

Cook on one side for 6-8 minutes, flip and cook for another 4-5 minutes. Continue with all the chicken.

Let the chicken cool down slightly before slicing or chopping to serve on the pita sandwiches.
Pita Sandwiches
Step 1
To make the sandwiches, first prepare the "salad'.
Step 2
Prep the veggies by thinly slicing the red onion, chopping the cucumber, and cutting the cherry tomatoes in half or quarters.

Add all the veggies to a large bowl along with all the seasonings, the lemon juice, olive oil and parsley. Mix to combine.

At the very end mix in the feta cheese so that it doesn't break down even more.

To start assembling the sandwiches, warm up each pita on a hot skillet for 30 seconds per side, I like to spray them with a little bit of cooking oil so they get slightly crisp.

Start by spreading a thin layer of hummus on the pita, then a layer of tzatziki, the chicken and the cucumber feta salad.
