Ingredients
Trader Joe’s Falafel Mix (Follow box instructions)
5 mini cucumbers or 1 large, grated
1 jalapeño, grated
2 garlic cloves, grated
1 lemon, zest & juice
1 cup dill, freshly chopped
2 cup Greek yogurt
2 tsp salt
2 tsp black pepper
1 tbsp olive oil
vegetable oil or canola for frying
Brown rice, I used the pre-cooked microwaveable stuff
Cherry Tomatoes, halved
Cucumbers, diced
red onion, diced
Hummus
Chili Oil
Crumbled Feta
Directions
Step 1
Prepare the falafel mix according to box instructions. Let it sit while you prepare the rest.

Grate the cucumber onto paper towels. Squeeze out as much of the water as possible.

To the cucumber, grate in the jalapeño, garlic, lemon zest.

Add in the lemon juice, Greek yogurt, chopped dill, salt, pepper & olive oil. Mix to combine & set aside.

Step 5
Get oil in a large skillet. While it’s heating up, form the falafel balls. Add to the oil and fry for 3-4 minutes per side.

To assemble, add cooked brown rice to the bottom of a bowl, add the falafel, cucumber and tomatoes around the bowl, top the center of the bowl with the Tzatziki, hummus on the side, crumbled feta all over, diced onion & chili oil.
