Ingredients
2 lb chicken breast ( or thighs or a combination - diced)
2 tbsp Mazola® Corn Oil
1 onion, diced
1 bell pepper, diced
3 garlic cloves, minced or grated
1 tsp garlic powder
1 tsp onion salt
1 tsp Chile powder
½ tsp cumin
2 tsp black pepper
1 tsp salt
1 cup corn, fresh/frozen/canned
3 calabacitas(or zucchini), diced (about 4 cups)
2 roma tomatoes, diced
Directions
Step 1
To a large skillet on medium high heat, add the oil, once hot, add the diced chicken. Move around into a single layer and cook for about 5-8 minutes.

Mix the chicken around, then add in the onion, bell pepper, garlic and all the spices. Cook for about 5 more minutes.

Step 3
Add the corn, squash and tomatoes, mix and cook for 5 minutes. Cover pan with lid, reduce heat to medium low and simmer for 10-15 minutes.
