Ingredients
1 lb broccoli, cut into small pieces
1 lb Pasta
4 tbsp butter
2 tbsp olive oil
1 shallot, finely chopped
2 celery stalks, finely chopped
1 carrot, finely chopped
4 garlic cloves, finely minced
1 tsp crushed red pepper
1 tsp Italian seasoning
1 tsp salt
1 tsp black pepper
1 cup parmesan cheese, grated + more for topping
1 lemon, zest & juice
Directions
Step 1
Get a large pot of water to a boil.
Step 2
In another large pot, add the oil & butter, on medium high heat, add in the shallot, celery & carrot, sauté for 5-7 minutes.

Add in the spices & garlic. Cook for another 5 minutes.

At this point, start cooking for your pasta for 2-3 minutes less than the package calls for.

Add the broccoli to the cooked veggies, cook for about 7-10 minutes, mashing a bit as the broccoli starts to soften. You want some pieces to stay bigger & some smashed.

Once the pasta is cooked, add it to the broccoli, mix to combine, SAVE some of the pasta water, add pasta water to help make the sauce.
Step 7
Mix in the grated Parmesan.

Mix in the lemon zest & juice towards the very end. Taste for seasoning & adjust if needed.
