6 Boneless Chicken Thighs
1 tablespoon Olive Oil
1 tablespoon Greek Yogurt
1 tablespoon Lemon Juice
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Oregano
1 teaspoon Thyme
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1 teaspoon Onion Powder

Directions
Step 1
In a bowl, combine the chicken thighs with all the listed ingredients. Ensure each chicken thigh is evenly coated in the marinade. Place the bowl in the fridge for up to an hour to marinate.
Step 2
Preheat your oven to 400ºF (200ºC). To create the spit, use a large onion cut in half as the base and 2-4 bamboo sticks. Insert the sticks into the onion halves and then skewer the marinated chicken thighs onto the sticks, stacking them on top of each other.
Step 3
Place the chicken in the oven and roast for 1-2 hours until the chicken is fully cooked through.
Step 4
Carefully remove the chicken from the spit and serve it with your gyro ingredients. Enjoy!
