Teriyaki shrimp fried Rice

Ingredients

For the Fried Rice

1 lb (450g) shrimp, peeled and deveined

3 tbsp Garlic butter, or more

1 Yellow onion, diced

2 tbsp vegetable oil, divided

3 cups cooked basmati or jasmine rice (preferably chilled)

1 cup mixed vegetables (such as carrots and peas)

3 green onions, sliced

2 cloves garlic, minced

3 large eggs, lightly beaten

The Go To blend seasoning

smoked paprika

cayenne

salt and pepper, to taste

For the Teriyaki Sauce:

1 cup water

¼ cup soy sauce

2 tbsp honey

2 tbsp brown sugar

2 tsp Ginger paste

1 tbsp Minced garlic

2 tsp Red pepper flakes

1 tbsp mirin (optional, for added depth)

1 tbsp rice vinegar

½ tbsp cornstarch mixed with 1 tbsp water (for thickening)

½ tsp sesame oil

Directions

Step 1

Season the shrimp with paprika, cayenne, and The Go-To Blend seasoning (or garlic powder, salt and pepper )

Step 2

In a small bowl, whisk together soy sauce, honey, brown sugar, mirin (if using), rice vinegar, red pepper flakes, ginger paste, minced garlic, and sesame oil.

Step 3

Heat the mixture in a small saucepan over medium heat. Stir in the cornstarch mixture and simmer until the sauce thickens slightly. Set aside.

Step 4

In a skillet or wok, add vegetable oil. Add the onions and saute until fragrant , next add in garlic and sauté for about 30 seconds until fragrant. Add the mixed vegetables and cook for 2-3 minutes until slightly tender.

Step 5

Push the vegetables to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until cooked, then stir to combine with the vegetables.

Step 6

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Add in garlic butter, soy sauce, and green onions. Season with The blend seasoning or salt and pepper. Stir-fry for 3-4 minutes until the rice is heated through. (Can toss in shrimp or plate separately)

Step 7

Plate. Pour Teriyaki sauce over rice and shrimp. Garnish with sesame seeds and sliced green onions, if desired. Serve hot.
