Ingredients
Spaghetti pasta
1 lb mild or hot Italian sausage
½ tbsp olive oil
4 garlic cloves minced
2 tbsp shallots diced
2 tbsp tomato paste
1 tb hot chili oil
½ cup white wine
1 cup heavy cream
½ cup shredded Parmesan cheese
¼ cup pasta water
Salt and pepper to taste
Garlic powder
pinch of sugar

Directions
Step 1
1. Boil pasta according to package . Reserve 1/2 cup pasta water ( may not need to use the entire 1/2 cup of water)
Step 2
2. In a large skillet on medium high heat brown sausage. Once done remove from pan and sit aside
Step 3
3. In that same pan add in olive oil and hot chili oil. Cook shallots and garlic for a minute.
Step 4
4. Add in tomato paste. Cook this for an additional 2-3 while continuously stirring.
Step 5
5. Pour in white wine and let this simmer for 1-2 minutes then add in heavy cream . Season with salt and pepper, garlic powder, and a pinch of sugar.
Step 6
6. Add in shredded Parmesan. Next add in 1/4 cup pasta water. More if needed to get desired thickness
Step 7
7. Stir in sausage and pasta. Top with fresh Parmesan and parsley! Enjoy!
