Ingredients
4 Lobster tails
Linguine pasta
⅓ cup Shallot
3 - 4 Garlic Clove
½ cup Cherry Tomatoes
1 cup Heavy cream
½ cup parmesan
¼ cup DRY White wine
½ cup Pasta water or chicken stock
Red pepper flakes
Cajun seasoning
Garlic powder
Onion powder
Cayenne
Charred Chile lime blend ( fire&smoke society)
Lemon
Butter
Parsley
Directions
Step 1
Prep lobster. Take kitchen shears and cut down the middle of the shell from top to bottom. Gently pull lobster meat out. Rinse meat with cold water then cut into small pieces. Season lobster with cajun, charred Chile and lime blend, and parsley and sit aside.
Step 2
Prep vegetables . Dice shallots about 1/3 cup and sit aside. Mince 3-4 garlic cloves. Next rinse your tomatoes and cut in half lengthwise.
Step 3
Bring large pot of salted water to a boil. Cook pasta according to package ( this will vary depending on your pasta choice) . Make sure to reserve at least 1 cup of pasta water as you may need it. In a medium-large skillet on medium high add 2 tbsp of butter and lobster. Add in a squeeze of lemon juice and parsley and cook for 5-6 minutes. Once done remove from skillet and sit aside.
Step 4
Next in the same skillet add in a tsp butter . Once melted add in shallots and cook for 2 minutes before adding in garlic. Cook for another minute now add in white wine and tomatoes. Let this cook down for about 3 minutes. At this time you will add in your seasonings plus red pepper flakes. Adjusting to your liking.
Step 5
Add in heavy cream and allow this to simmer. Now add in parmesan. Allow to melt then add in pasta water to get desired thickness. Toss in your cooked lobster and linguine and top with parsley. All done! Enjoy! :)
