Ingredients
Rack of Lamb
1 tbsp Green seasoning (Epis)
2 tbsp Walkerswood jerk seasoning
1 tsp Allspice seasoning
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Paprika
1 tsp Ginger paste
½ tbsp Garlic paste
1 tbsp Olive oil
1 tbsp Brown sugar
2 tsp Worcestershire sauce
1 tsp Red pepper flakes
Salt & pepper to taste
Jerk Sauce
2 tbsp Jerk seasoning
⅓ cup Ketchup
1 cup Brown sugar
1 tbsp Honey
⅓ cup Pineapple juice
2 tsp Worcestershire sauce
2 garlic cloves minced
1 tsp Garlic powder
½ tsp Cayenne
½ tsp allspice
1 tsp apple cider vinegar
3 tsp Butter
Directions
Step 1
1. Place chops in a large bowl . Coat with olive oil, seasonings, ginger, and garlic paste . Combine well, cover and let sit in fridge for at least 1 hour.
Step 2
2. In a large skillet on medium high sear lamb chops on all sides for 3 mins or until your liking. Once done remove from pan and sit aside.
Step 3
3. In a sauce pan add butter and garlic . After a minute add in jerk, ketchup, brown sugar , Worcestershire sauce, vinegar, pineapple juice, honey, garlic powder, cayenne, and allspice. Reduce heat to low and let simmer until thicken

4. Pour sauce over chops and enjoy
