Ingredients
3 lbs Whole chicken wings (or your preferred chicken cuts)
⅓ cup olive oil
¼ cup cornstarch
1 tbsp baking powder
2 tsp all purpose seasoning
2 tsp chili garlic or garlic & herb seasoning
1 tsp onion powder
1 tsp paprika
½ tsp cayenne pepper (optional)
¼ cup butter
1 cup bbq sauce
⅓ cup honey
¼ hot sauce
1 tbsp liquid smoke
2 tsp garlic paste
Salt and pepper to taste
Oil for frying (vegetable or peanut oil works well)
Directions
Step 1
Pat the chicken pieces dry with paper towels. In a large bowl, coat chicken with olive oil, all purpose, chili garlic seasoning ( or garlic & herb) onion powder, garlic powder, and cayenne. Add salt if using a low sodium all purpose. Sprinkle on baking powder and cornstarch and combine well. Let this sit for 10 minutes.
Step 2
Pour enough oil into a deep skillet or frying pan so that the chicken can be fully submerged or at least halfway covered. Heat the oil to 350°F (175°C).
Step 3
Gently place the chicken pieces in the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
Step 4
Fry the chicken for about 15-18 minutes, turning occasionally, until golden brown and fully cooked through (internal temperature of 165°F or 74°C).
Step 5
Once the chicken is cooked and crispy, remove it from the oil and place it on a wire rack or paper towels to drain excess oil.
Step 6
In a saucepan melt down butter, add bbq sauce, hot sauce, liquid smoke, garlic paste, honey, and cayenne (optional). Make sure taste is to your liking then remove from heat.
Step 7
Immediately toss chicken in sauce. Serve the fried chicken hot with your favorite dipping sauces or side dishes!
