Ingredients
1 lbs shrimp uncooked
2 cups andouille sausage
1 ½ cup shredded chicken
1 cup vegetable oil
1 cup flour
1 cup chopped onion
1 cup green bell pepper
1 cup red bell pepper
1 cup celery
6 garlic cloves minced
1 cup beer
6 cups chicken stock
2 tbsp file powder
2 tsp cayenne
1 tbsp onion powder
1 tbsp garlic powder
2 bay leaves
1 tbsp cajun seasoning
3 tbsp Worcestershire sauce
2 tsp kosher salt
Green onions
Fresh parsley
Hot cooked rice
(Optional add ins : okra, snow crab, jumbo lump crab meat, crab claw meat)

Directions
Step 1
1. In a dutch oven or large pot, heat oil over medium heat. Once hot add in flour and allow this to cook for 15-20 mins making sure to stir often. The roux should be the color of peanut butter
Step 2
2. Add in bell peppers, onions, celery, and garlic. Cook this for 5 mins then add in beer and chicken stock. Give this a good mix then add in cajun seasoning, onion powder, garlic powder, file powder, bay leaves, salt, cayenne , and Worcestershire. Bring to a boil then reduce heat to medium and allow to simmer for 1 hour.
Step 3
3. Next add in cooked shredded chicken and sausage. Allow this to cook for 10 minutes. Then add in shrimp and let this cook for additional 8 minutes.
Step 4
4. Once done pour over rice and top with green onions and parsley! All done
