Ingredients
1 lb ground beef
Fritos Corn chips
1 cup Beef broth
1 small yellow onion, diced
1 Red bell pepper, diced
2 jalapeños, diced
4 cloves garlic, minced
1 (14.5 oz) can of crushed tomatoes
1 (15 oz) can of chili beans, drained
2 tbsp Tomato paste
2 tbsp Chili powder
2 tsp Cumin
1 tsp Ancho chili powder
2 tsp paprika
1 tsp Cayenne pepper
2 tsp Onion powder
2 tsp Garlic powder
1 tsp Oregano
Salt and pepper, to taste
2 cups shredded cheddar cheese
16 oz Velveeta cheese
1 15oz Ricos nacho cheese
¼ cup milk, less or more to thin sauce
Directions
Step 1
1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Step 2
2. Add the diced onions and peppers to the skillet and cook until they are soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
Step 3
3. Add the canned tomatoes, chili beans, and beef broth to the skillet. Stir well to combine. Season with chili powder, ancho chili powder, cayenne pepper, garlic powder, onion powder, cumin, oregano, salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 45-60 mins to allow the flavors to meld together.
Step 4
4. In a medium pot on low heat melt velveeta and Rico’s cheese making sure to stir continuously. Add milk if needed to thin. Once sauce is to a consistency of your liking, remove from heat.
Step 5
5. Spread out a layer of Fritos, pour over cheese sauce then spoon the chili mixture evenly over the layer of Fritos. Sprinkle the shredded cheddar cheese evenly over the chili. (Optional toppings: Red onions , jalapeños, green onions)
