Ingredients

Cod fish filets

American cheese

Burger buns

Batter •

2 cups all purpose flour

½ cup cornstarch

16 oz club soda

1 large egg

¼ cup buffalo sauce

1 tbsp Tonys , salted

2 tsp smoked paprika

2 tsp onion powder

2 tsp garlic powder

1 tsp Cajun

1 tsp cayenne

Sauce

1 cup mayonnaise

¼ cup pickles, diced

1 tsp sugar

1 tsp cayenne

1 tsp Cajun

2 tbsp dill weed

1 tbsp chives

Lemon juice

Black pepper

Directions

Step 1

1. In a large bowl combine all ingredients for wet batter. Gradually add club soda , more or less to get desired thickness then sit aside

Step 2

2. Wash and dry Cod. Season with salt and pepper then coat with plain flour. Make sure all sides are coated then dredge into wet batter

Step 3

3. Fry fish until golden brown and done @, about 8 minutes. Remove from oil and sit on cooling rack

Step 4

4. In a medium bowl add mayonnaise, pickles, dill, chives, lemon juice, sugar and seasonings . Combine well . Adjust taste to your liking

Step 5

5. Butter your buns (optional) then assemble sandwich with fish, sauce, and American cheese. Enjoy!
