Ingredients

1 lbs ground beef

1 Yellow onion chopped

1 pk taco seasoning

1 tbsp onion powder

1 tbsp garlic powder

1 tbsp Tony’s

2 tbsp garlic and herb

1 tsp paprika

1 tsp chili powder

12 corn tortillas

10 oz Enchilada sauce

1 pk Velveeta cheese slices

15 oz chili ( I use wolf brand no beans)

½ cup green onions

1 cup shredded Colby Jack

½ cup water

Directions

Step 1

1. preheat oven to 350F

Step 2

2. In a large skillet cook ground beef and onions over medium high heat. Break the meat up as it cooks. Once done drain any excess oil.

Step 3

3. Season meat with taco seasoning, onion powder, garlic powder, Tony’s, paprika, chili powder, and garlic & herb. Pour in water and allow to cook for 5 mins or until water reduces .

4. In a sauce pan on medium heat chili. And in 2 tbsp ground beef

Step 5

5. In another skillet add 1 tbsp oil to a skillet. Once hot add the tortillas and flip each side quickly to warm. This will allow you to roll the tortillas without breaking

Step 6

6. Pour 1/4 cup enchilada sauce and 1/4 cup chili mix to the bottom of a baking dish.

Step 7

7. Fill each tortilla with a half of slice of cheese, ground beef, shredded cheese, then roll tightly. Repeat for each and place in pan

Step 8

8. Pour the remaining enchilada sauce over the enchiladas so they are all covered. Place a slice of cheese then top with chili and shredded cheese. Add green onions

Step 9

9. Cover with foil and bake for 20 minutes . Remove from oven

Step 10

10. (Optional) Top with sour cream cilantro or parsley and taco sauce! Enjoy
