Ingredients
2 lbs pork belly or pork ribs
2 tbsp neutral oil
2 onions(cut into quarters)
2 tomatoes(cut into quarters)
1 tbsp black peppercorns
2 bay leaves(optional)
10 cups water
¼ cup fish sauce
1 ½ - 2 cups tamarind pulp or 1 2 packets tamarind soup mix
1 inch daikon(cut into 1/4 slices)
taro (optional)
3 banana chili pepper
1 inch eggplant(cut into 1/4 slices)
okra (optional)
1 bunch long beans(cut into 3 inch segments)
1 bunch water spinach(Kangkong)

Directions
Step 1
Cover pork with water and bring to a boil.

Boil for 8-10 minutes then remove the pork, rinse it under cold water, and pat it dry.
Step 3
In a large pot, heat oil on medium heat and sear the pork belly until browned on all sides.

Add onions and cook until translucent.

Add tomatoes, bay leaves, black peppercorns, and cover with water.

Simmer on medium low heat for an hour or until the pork is soft.
Step 7
Flavor the soup with fish sauce and tamarind.

Add daikon and chili peppers and cook for 30 minutes until daikon is soft.

Season to taste with salt and enjoy.
