Ingredients
1 ½ lbs beef chorizo
1 lb Oaxaca cheese
1 jalapeño
3 green onions
3 sweet peppers
Directions
Step 1
Preheat your skillet on medium high heat.
Step 2
Now slice up the jalapeños, sweet peppers and green onions. If the chorizo has casings remove them and place it on a plate.
Step 3
Now let’s sauté the veggies! Place them in the skillet for 5 min and then throw in the chorizo. Let the chorizo render out the fat and then add the Oaxaca cheese. Stir it in and let it melt all the way.
Step 4
Heat up the tortillas and now it’s time to assemble! Add the queso fundido to the tortilla and it’s time to eat.
