Ingredients

2 racks of spare ribs

3 tbsp cane sugar

1 tbsp sweet paprika

1 tsp black pepper

1 tsp garlic powder

¼ - 1 cup agave syrup

Directions

Step 1

Start off by preheating your grill to 250-275 degrees.

Step 2

Next mix your seasoning by combining in a bowl, cane sugar, paprika, black pepper, and garlic powder.

Step 3

Then prep your ribs. Remove the back of the membrane with a paper towel, it’s so much easier to hold onto the membrane with it. Generously salt the back and meat side of the ribs. Then apply your homemade rub. Let that rub sweat in for 10 min.

Step 4

Next place the ribs on the smoker. Rotate the ribs if need be. Then add some chunks of wood for smoke flavor. I went with pecan wood. Smoke them for 3 hours unwrapped, then wrap them in foil and add 1/2 a cup of agave syrup per rack in the foil. Seal tightly and place them back on the grill for an additional 1:30 hours.

Step 5

Once that time passes remove ribs from the foil and glaze with a bit more agave, then place the ribs back on the grill for an additional 10 min to get the sauce nice and tacky. Once the time is up, remove the ribs let cool for 5 min, slice and enjoy!

Notes

You can serve them along cole slaw or Mac n cheese. You can choose to add bbq sauce to them. Once you unwrap the foil, see if one of the bones slides out, if it does, then they are nice and tender.
