Ingredients

2 lbs flap meat or skirt steak

4 12” flour tortillas

1 cup cheddar cheese

1 large russet potato

½ cup sour cream

2 large avocados

2 garlic cloves minced

1 Juice of lime

Salt and pepper to taste

1 steak tomato diced

¼ sweet onion diced

1 jalapeño pepper diced

1 tbsp cilantro

2 Juice of limes

Salt and pepper to taste
Directions
Step 1
Start off by making the pico de gallo! Combine all pico de gallo ingredients in a bowl, add lime juice, salt and pepper to taste, and place it in refrigerator.
Step 2
Add the flesh of the avocados to a bowl and mash until smooth, add minced garlic cloves, lime juice, and finally salt and pepper to taste. Combine and place in refrigerator.
Step 3
Slice up the russet potato into fries, you can also use a fry slicer.
Step 4
Now fire the loco griddle and set one of the burners at 350 degrees.
Step 5
Once preheated, add about 2 tbsp cooking oil and place your fries over it, you want to turn your fries every 3 min until golden brown, do season them with salt and black pepper.

Once they look golden, turn your burner to low and let them hang out. Now set one of the other burners on sear mode.
Step 7
While it’s preheating, season the meat with salt, black pepper and garlic powder, now it’s time to cook it up!
Step 8
Searing the meat and turning it every 2 min until the meat is done to your preferred donees. I cooked mine a total of 8 minutes.
Step 9
Once the meat is done, place in a cutting board to rest for at least 3 minutes, at this time also remove the fries. Slice the meat against the grain for a more tender bite

Now it’s time to assemble the burritos! Warm the tortillas for about 30 seconds, this will make them easier to fold. Add guacamole first to the tortilla, next the meat, fries, pico de gallo, sour cream and finally the cheddar cheese, now roll into a burrito.
Step 11
You want to carefully roll it and fold in the edges. You want to tuck and roll. Once you do, place back on the griddle at 300 degrees, flip the burrito and remove it until the tortilla is nice and crispy.
