Ingredients
1 lb 85/15 ground beef
4 slices sourdough bread
8 slices Munster cheese
4 eggs
2 tbsp butter
2 diced golden potatoes
1 tbsp avocado oil
For the seasoning
2 tsp taco seasoning
Salt and pepper to taste
For the sauce
3 tbsp mayo
2 tbsp sriracha sauce
Directions
Step 1
Preheat a griddle or a large non-stick skillet on medium-high heat.
Step 2
In a bowl, mix diced potatoes with 2 teaspoons of taco seasoning.
Step 3
Add 1 tablespoon of avocado oil to the griddle or skillet, and then add the seasoned diced potatoes. Cook them until they are crispy and golden brown. This should take about 8-10 minutes. Once done, remove from the griddle or skillet and set aside.
Step 4
In the same griddle or skillet, add the ground beef and season it with 2 teaspoons of taco seasoning. Cook the beef for about 10-12 minutes, until it’s nicely browned. Once cooked, remove from the griddle or skillet and set aside.
Step 5
In a small bowl, whisk the eggs with salt and pepper. Place the griddle or skillet over low heat and add the whisked eggs. Stir the eggs continuously until they are cooked through. Once cooked, remove from the griddle or skillet and set aside.
Step 6
In another small bowl, mix 3 tablespoons of mayo with 2 tablespoons of sriracha sauce to make the sauce.
Step 7
To assemble the sandwich, place 2 slices of Munster cheese on each slice of sourdough bread.
Step 8
Add the cooked ground beef on top of the cheese on one slice of bread.
Step 9
Next, add the cooked diced potatoes on top of the ground beef.
Step 10
Add the cooked eggs on top of the potatoes.
Step 11
Finally, spread the sriracha mayo sauce on the other slice of bread and place it on top of the eggs to close the sandwich.
Step 12
Spread 1 tablespoon of butter on each side of the sandwich.
Step 13
Toast the sandwich on the griddle or skillet over medium heat until it’s golden brown and the cheese is melted. This should take about 3.5 minutes per side.
Step 14
Remove the sandwich from the griddle or skillet, cut it in half, and serve hot.
