Tilapia a la Mexicana

Ingredients

4 Tilapia Fillets

1 onion

2 Roma tomatoes

2 garlic cloves

1 big handful of cilantro

Salt

Pepper

Onion powder

Garlic powder

Oregano

Smoked paprika

Tomato Bouillon

Corn starch

Olive oil

Butter

Directions

Step 1

Start by dicing, one whole onion, two Roma tomatoes, two garlic cloves, and one big handful of cilantro. Set aside.

Step 2

season your tilapia fillets with 1 teaspoon of salt, pepper, onion powder, garlic powder, oregano, and smoked paprika

Step 3

In a sauce pan, add 2 tablespoons of olive oil, and 1 tablespoon of butter to melt on medium heat

Step 4

Once the butter is melted, add in your tilapia fillets. Sauté on medium heat for about 3 to 5 minutes each side. Don’t worry if they’re not fully cooked. We’re going to add them back in later.

Step 5

Once tilapia is seared on both sides, remove and add in our diced vegetables to sauté in that same oil

Step 6

Season the vegetables with the dash of salt, pepper, oregano, and 1 teaspoon of tomato bouillon

Step 7

Sauté vegetables for about five minutes until softened

Step 8

Measure 3/4 of a cup of water and 1 teaspoon of cornstarch. Mix well.

Step 9

Add cornstarch mixture to vegetables, and bring up to a simmer

Step 10

Add in your tilapia fillets and cover and simmer on medium low for 10 minutes

Step 11

Serve and enjoy!
