Ingredients
2 lbs chicken breast
Penne Pasta
½ Half a block or cream cheese
1 can of Chipotle Peppers
Crema Mexicana (Table Cream)
1 tbsp Butter
1 Garlic Clove
Salt
Pepper
Onion Powder
Garlic Powder
Sazon
Oregano
Chicken Bouillon
Directions
Step 1
Start by bringing a big pot of water to boil. I added one big tablespoon of salt to season the water. Once the water is boiling, add in your pasta to your desired liking. (I like mine al dente). Pasta usually has cooking times on the package.
Step 2
Season thinly sliced chicken breast with one teaspoon of the following salt, pepper, onion powder, garlic powder, and one packet of Sazon. Mix well to combine.
Step 3
To a saucepan, add 2 tablespoons of olive oil on medium high heat. Add in your chicken, cook uncovered for five minutes, flip over and cover and cook for another five minutes.
Step 4
For our chipotle sauce, add half a block of cream cheese to a blender, one cup of pasta water, half a cup of table cream, one garlic clove, 1 tablespoon of chicken bouillon and 1 teaspoon of oregano.
Step 5
I added one whole can of chipotle peppers and it was definitely spicy. I would recommend to use half a can if you don’t want it too spicy. Blend well until you have a smooth sauce.
Step 6
Strain your pasta and in the same pot add 1 tablespoon of butter. Once melted add in the chipotle sauce to bring up to a simmer on medium heat
Step 7
Once the sauce is at a low simmer, add in your pasta. Mix to combine well.
Step 8
Serve and enjoy!
