Ingredients
2 Roma Tomatoes
½ Half a large onion
2 Jalapeños
2 Garlic Cloves
2 ½ cup Half and Half Cream
16 oz Queso Oaxaca
Salt
Pepper
Chorizo
¼ cup Flower
Directions
Step 1
Start by dicing your 2 Roma tomatoes, half a large onion and 2 jalapeños
Step 2
Once finely diced, sauté in a pan with olive until onion is translucent (about 5 min)
Step 3
Once onions are translucent add your 2 diced garlic cloves and saute for another 2 minutes
Step 4
Add 1/4 Cup of Flower and mix to combine with veggies. Cook for another 3 minutes
Step 5
Add in 2 1/2 Cups of of Half and Half and bring to a slow simmer
Step 6
Add in your 16oz of queso Oaxaca. I cut them into smaller pieces to melt easier. Leave your flame on medium low. It’ll take about 5 minutes for cheese to completely melt.
Step 7
Fully cook a whole link of chorizo and top our melted cheese.
Step 8
Pair with tortillas to make tacos or corn chips as a dip!
