Ingredients
1 Onion
3 Garlic Cloves
Fresh Basil
Fresh Spinach
Protein
1 lb 90/10% ground beef
Seasonings
Salt
Pepper
Italian Seasoning
Sugar
Chicken Bouillon
What You’ll Need
2 14oz Can Tomato Sauce
Tomato Paste
2 quarts of Low Sodium Chicken Broth
Heavy Cream
½ lb lasagna noodles
Ricotta Cheese
Parmesan Cheese
Directions
Step 1
Start by dicing your whole onion and 3 garlic cloves
Step 2
Brown your 1 lb of ground beef in some olive oil on medium heat. Once the beef starts to brown add in your diced onion. Saute for about 5 more min until the onions are translucent.
Step 3
Season with a teaspoon of salt, pepper and Italian seasoning
Step 4
Once the onion is translucent add in your diced garlic cloves. Saute for another 2 min
Step 5
Add in your two cans of tomato sauce and 2 tablespoons of tomato paste
Step 6
Add your low sodium chicken broth and half a cup of heavy cream
Step 7
Season to taste with chicken bouillon and more pepper and Italian seasoning (I used about another teaspoon of each)
Step 8
Also add 1 tablespoon of sugar to balance the acidity of the tomatoes
Step 9
I added about 5 basil leaves and a handful of spinach
Step 10
Bring your soup up to a boil. Once boiling, were going to break up our lasagna noodles into about 2 inch pieces.
Step 11
Add your noodles to the soup and cook till aldente (about 10 min)
Step 12
For our cheese I combined about 1 cup of ricotta cheese and half a cup of parmesan cheese. I mixed to combine with a spoon. I also added extra basil for a pop of color and flavor.
Step 13
Top your soup
Step 14
Serve and enjoy!
