handful of Spinach
handful of Iceberg Lettuce
8 Tomatillos

Directions
Step 1
Start by boiling 6lbs of hominy and one whole chicken on medium high heat. We’re going to boil our chicken and hominy with half an onion, one whole head of garlic and 3 bay leaves. Bring up to a boil.
Step 2
While that comes up to a boil we are going to roast our green vegetables. Were roasting 3 poblano peppers, 1 bell pepper, 3 jalapeños, half an onion, 5 garlic cloves and 8 tomatillos. Were going to roast on high until the veggies have a good char to them. Don’t be scared of burning them a little it adds to the flavor!
Step 3
Once roasted throw everything into the blender.
Step 4
Add handful of cilantro, spinach and lettuce as well.
Step 5
Were going to season with 1 tablespoon of chicken bouillon, 3 teaspoons of salt and oregano, 1 teaspoon of pepper, cumin, thyme
Step 6
Add 1 cup of the hominy from the boiling pot and add to blender, alongside an extra cup of the broth
Step 7
Blend everything till smooth. It’ll be a bright green thick sauce!
Step 8
Add our sauce to our boiling chicken and hominy.
Step 9
Let simmer on medium low for 45 min.
Step 10
Serve and enjoy!
