Dominican Style Pollo Guisado

Ingredients

½ Half an onion

3 Mini Bell Peppers

handful of Cilantro

Protein

2 lbs chicken drumsticks

Seasonings

1 Sazon Packet

Salt

Pepper

Onion and Garlic Powder

Oregano

Soy Sauce

Goya Sofrito (also called Recao)

Directions

Step 1

Start by marinating your chicken with a quarter cup of Goya Sofrito, 1 Packet of Sazon , 1 Table Spoon Soy Sauce.

Step 2

Season with 1 tsps of pepper, onion and garlic powder and oregano

Step 3

I let mine marinate overnight, but you can let it marinate for at least 30 min.

Step 4

Once ready to cook, were going to brown 1 tablespoon of sugar in olive oil. Its not going to make the chicken sweet its going to give it a darker color. You’ll know the sugar is ready when it turns into a dark brown caramel color.

Step 5

Add in your chicken and let saute without moving for about 3 min on medium heat, that way it absorbs the color. After 3 min feel free to flip the chicken.

Step 6

Once it starts to brown you’re going to add 1 tablespoon of tomato paste. Let saute for another 3 min, careful that the tomato paste doesn’t burn.

Step 7

Once the chicken has a good sear on all sides add 1 cup of hot water

Step 8

Cover and let simmer on medium low, for 15 min or until the water has evaporated, then add 1 more cup of hot water

Step 9

Add half of a thinly sliced red onion, 3 mini bell peppers and one headful of cilantro

Step 10

Allow to simmer on medium low for another 10 min, season the sauce with salt and pepper to taste.

Step 11

Serve and Enjoy!
